This past weekend I was showing coconut love at the Whole Life Expo. Lots of exciting new foods, supplements and beauty products to test BUT a beet product captured my full attention. Before revealing the product’s name, let me show some love to the stunning ruby colored BEET!
Autumn Arrivals has featured the beloved beet in the past. Snowy weather is quickly approaching and beets remain on my warm up winter menu!
Beets are a bounty of health benefits. Yes, they do contain the most sugar out of any vegetables. Relax! You will not pack on the pounds. I’m not telling you to consume processed cheap foods containing refined sugar beets! I’m excited about fresh organic beets.
Nourishing the body is vital to optimal health and healing. Keep it simple! Best rule of thumb is to consume your daily diet centered around the brightest most vividly colored fruits and vegetables! With approximately 75 calories a cup, beets should be added to any meal!

Stock up on beets! Scrub well and cut the ends off. There is no need to peel off the skin. They can be roasted with herbs or steamed for 15 minutes. If you boil beets, please drink the water! A quick meal is as easy as sliced beets on quinoa and topping with 1/4 cup hemp hearts. Hate cooking? There are easy solutions! I have my favorite beet loving Green Zebra Kitchen on speed dial!
Beets are an amazing juicing choice. They are high in anti-oxidants easing inflammation in the body.

I get the fact that not everyone is on the beet bandwagon! Grating fresh beets into stews and salads is my “baby step” advice to you!
